SERVING: 16 sliceINGREDIENTS:
- Whole wheat flour- 1&1/2 cup
- Baking powder- 2 tsp
- Baking soda- 1 tsp
- Sugar- 1/2 cup
- Curd- 1 cup
- Oil- 1/2 cup
- Vanilla essence- 1 tsp
- Tutti Frutti- 2 tbsp
METHOD:
- Sieve wheat flour, 1/2 tsp baking powder & 1/2 tsp baking soda together about 4 times
- Pre heat the cooker on high flame. Remove the gaskit and whistle.
- Beat sugar & curd together until the sugar dissolves completely. After that put 1/2 tsp baking powder and 1/2 tsp baking soda in that and give a mix. Set aside for 5 minutes.
- Now add oil and vanilla essence in the frothy curd and mix it well.
- Add the sifted flour and fold it in gently. Then add the tutti fruity into the cake batter and give it a mix.
- Grease the baking tin with oil and little flour and pour the cake batter. Use flat spatula to smoothen the top and tap the cake tin lightly. Top with the remaining tutti fruity and dry fruits.
- Place the cake tin in preheated pressure cooker and bake it on low flame for 30-35 minutes. After 30 minutes insert toothpick and if it comes out clean then the cake is done.
- Switch off the burner and allow the cake to cool for 10-15 minutes.
- Transfer to a wire rack to cool it further.
- Slice the cake and enjoy.
