MUTTON ROGAN JOSH
No onion, no garlic, no tomato. It is made with plain yogurt and spice powder. This curry taste best when served with hot steamed rice or paratha.

Mutton:500gm
Garam masala powder: 2tsp
Lemon juice: 2tsp
Ghee: 4tbsp
Bay leaf: 2
Cinnamon stick :1 or 2
Black cardamom: 2 crushed into powder
Green cardamom: 2 crushed into powder
Salt to taste
Ingredients for paste:
Curd- 1 cup
Black pepper powder: 1 tsp
Kashmiri chilli powder: 3 tbsp
Green cardamom powder: 1 tsp
Black cardamom powder: 1/2 tsp
Method:
Take mutton in a bowl snd add salt and lemon juice. Marinate it for 2 hours. If you leave it for marination overnight well and good.
Take curd in a bowl and whisk it till it is smooth and then add all the paste ingredients listed above. Mix well and keep it aside.
Take pot or pressure cooker and heat it. Add bay leaf, cinnamon stick, black cardamom, green cardamom and saute for a minute. Now add mutton and mix it well and brown the meat for around 5-7 min.. Now add the curd mixture and mix it well. Let this cook for 10 minutes then sprinkle some garam masala powder. Add some water approx 1-2 cups and put more salt if required (as per the taste). Now cover the pot/pressure cooker and keep the flame low and cook it for 2 hours. Check in between after 1 hour and mix it. Check again after 1 hour the mutton will be cooked and falling off the bone. Serve with steamed rice or Paratha.
